Behind the Scenes at Wafels & Dinges

 A couple of weeks ago, I met up with Hagan again for one of his concluding 93 Plates meals.  (We had met earlier in his project to review H&H Bagels and Telepan).  This time, he organized a meeting at Wafels & Dinges, the mobile Belgian waffle truck that has taken NYC by storm.  

In true millennium fashion, I check out the waffle truck's twitter feed and website for its specific location early that morning.  I was looking forward to meeting owner Thomas DeGeest, who had recently won the 2009 Vendy Award Winner in Desserts and a Waffle Throwdown with Bobby Flay.


Thomas ushered us out of the cold and into the truck for a true behind the scenes view.  With two staff members taking and preparing orders, it was a tight but workable kitchen space. 
All waffles are made-to-order and can come with a variety of dinges or toppings.
My favorite was the Brussels Wafel with whipped cream and powdered sugar.  The Brussels is the larger waffle.  It was so light, yet crispy.
The other waffle type is the Liege Wafel.  Though it is smaller, it was denser and more substantial than the Brussels.  This one was drizzled with spekuloos spread (a spread made with cookies that taste similar to gingerbread, but sweeter) and powdered sugar.  This was the waffle that beat Bobby Flay and was Hagan's favorite.
Finally, the piece de resistance:  Brussels Wafel with bacon!  This breakfast waffle was heavenly - steaming hot, light as air, and both savory and sweet at the same time.
